How long does this build actually run without sun?
Runtime is the only question that matters and it has an arithmetic answer. A power station's capacity is quoted in watt-hours, and a load's appetite is quoted in watts, so runtime in hours is capacity divided by average draw. The trap is that a fridge's rated wattage is what it pulls while the compressor is spinning, and the compressor is not always spinning.
A 30 to 45 quart compressor fridge in a 90F vehicle runs roughly a 40 percent duty cycle and averages 30 to 45 amp-hours a day at 12V, which is 380 to 575 watt-hours. Against a 1,056Wh station that is just under two days. Add a phone, a headlamp and a laptop charge and you land at a day and a half in heat, two and a half in cool weather.

How much does the 100W panel actually give back?
Panel output is rated watts multiplied by peak sun hours multiplied by a derate factor. Peak sun hours is not daylight hours: it is the number of hours of full-strength sun the day is equivalent to, and across most of the continental United States it runs 3 in winter to 6 in summer. The derate covers heat, cable loss, angle and controller efficiency, and 0.75 is a fair figure for a good portable panel that you aim.
So a 100W panel at 5 sun hours returns 100 x 5 x 0.75 = 375 watt-hours, which is about 29 amp-hours at 12.8V. Against a 635Wh daily draw that covers roughly 60 percent of what you spend. What you can skip

- The clamp meter . Genuinely useful and genuinely skippable at this tier, because a power station already shows you input and output watts on its own screen. It becomes essential the moment you wire anything yourself.
- The insulated fridge cover. A real efficiency gain in hot weather, and nothing about the build fails without it. Buy it after the first hot trip, when you have seen your own numbers.
- The second water can. One can is five gallons, which is about a day for two people. Skipping the second saves money and 42 lb of payload, and costs you a water stop.
What you cannot skip: the tie-down straps and the connector. An unsecured fridge and a cigarette plug carrying 10A continuously are the two things on this list that can actually hurt you or the vehicle, and together they cost less than the lantern.
What to upgrade first from here
Charging, not storage. The instinct is to buy a second power station, and it is almost always wrong: doubling capacity doubles how long you can coast, while improving charging means you stop coasting at all.
